Caffe' Luigi Academy - SCA Coffee Skills Program

Caffe 'Luigi Academy offers a series of Certified Seminars to the standards set by the Specialty Coffee Association (SCA) to ensure that education is high and meets the world standards set by it.

The new educational program Coffee Skills Program (CSP) lets you choose the training path that suits your interests and needs.

The program insists of six (6) different sections, as below:

  • Introduction to Coffee
  • Barista Skills
  • Brewing
  • Green Coffee
  • Roasting
  • Sensory Skills

which are formed in three (3) levels of knowledge and skills to inspire pupils to the magic world of coffee: Level 1 - Foundation, Level 2 - Intermediate and Level 3 - Professional.

Level 1 - Foundation (5 points) provides a wider knowledge of the direction you have chosen and of course it helps you decide whether you want to move on to the next level to get even deeper. This level does not require previous experience. Seminars last one (1) day, 9 hours / day.

Level 2 - Intermediate (10 points), is appropriate if you are already working in the broader coffee area - a related subject course of course - and you have a good knowledge of basic skills. A basic requirement that you must have successfully completed Level 1 - Foundation. Seminars last for two (2) days, 9 hours / day.

Level 3 - Professional (25 points) is best suited if you want to acquire high level knowledge, depending on the direction you have chosen. A basic requirement that you must have successfully completed Level 2 - Intermediate. Lessons at this level usually last three (3) days, 8 hours / day.

As soon as the 100 points are achieved, you will be awarded the "SCA Coffee Skills Diploma".

 

NOTE

Among the "Levels", there must be a minimum of two (2) months before the participant declares participation.

The above limitation does not apply to the Introduction to Coffee section, in which the person concerned may register at any time.

INTRODUCTION TO COFFEE - Level 1 (10 points)

Get general knowledge about coffee…

  • history of coffee,
  • herbal medicine,
  • the structure of the fruit and grains,
  • the cultivation of cherries,
  • processing methods,
  • geographical zones - Arabica Vs Robusta,
  • blends - single-varieties - single origin - single estate,
  • harvesting periods,
  • milling mills,
  • ways of milling,
  • extraction,
  • tds,
  • coffee,
  • brew equipment,
  • caffeine and human organism,
  • the role of coffee in the global economy.

 

Participants are examined: 1) in a written test and 2) in practice.

The tests are conducted in Greek, but if one of the participants wishes, it is also possible to do it in English.

 

BARISTA SKILLS - Levels: 1, 2, 3

Get skills, that a barista needs…

  • setting of grinding mill,
  • correct use of coffee machine and grinding mill,
  • cleaning of coffee machine and grinding mill,
  • problem solution,
  • tamping,
  • channeling,
  • espresso preparation,
  • beverages with espresso preparation (cappuccino, freddo, flat white, latte),
  • chocolate beverages preparation,
  • milk techniques,
  • customer service.

 

Participants are examined: 1) in a written test and 2) in practice.

The tests are conducted in Greek, but if one of the participants wishes, it is also possible to do it in English.

 

BREWING - Levels: 1, 2, 3

Learn about the different methods of coffee preparation and the factors that affect the quality, but also...

  • Preparation methods (Chemex, Siphon, V60, French Press, etc.),
  • Mapping of coffee extraction,
  • Grinding profile,
  • Water temperature,
  • Water quality,
  • Cupping.

 

Participants are examined: 1) in a written test and 2) in practice.

The tests are conducted in Greek, but if one of the participants wishes, it is also possible to do it in English.
